I believe that B would be your correct answer based on the fact that the food that are listed here would be nouns, and that would be exactly what a appositive would be. When nouns and other nouns would be right next to each other. And in this case, it would be food and other foods in the sentence that would be right next to each other.

The correct answer is :My dad Chip, thought it would be fun to make a taco dinner station.
